Wally’s Wine & Spirits, the celebrity destination for wines with locations in Santa Monica and Beverly Hills, just opened at Resorts World, and now the restaurant claims its stake as a place to find high-end steaks as well wines by the bottle or glass. The restaurant has a 200-day dry-aged rib-eye steak from Fleishers in Brooklyn clocking in at $1,000.
The 50- to 60-ounce steaks grilled by executive chef Eric l’Huillier over almond wood and Bichotan Japanese charcoal come seasoned with truffle salt and black pepper and served with a black truffle bordelaise sauce, potato pomme Anne, grilled broccolini, and fresh shaved black truffles. The restaurant says it only carries a limited supply of the pricey beef.
Wally’s is known for its impeccable taste in wines with Christian Navarro, the president and principal of the wine bar, restaurant, and boutique helping A-list celebrities such as Jack Nicholson, Tom Cruise, and Diane Keaton with their wine purchases. The space at Resorts World blends a restaurant, social wine bar, and specialty gourmet market with a mind-bending 8,000-plus labels where every visit could bring a new experience.
Aside from the steak, the restaurant serves pizzettas, King salmon with golden chanterelles, and truffle Bolognese with veal and truffle ragu bianco. Wally’s classics made the move from Southern California as well. Truffle lentils come with English peas, truffle butter, and shaved truffle; the $30 Wally burger uses American wagyu, Old Amsterdam Gouda, heirloom tomatoes, caramelized onions, and Wally’s sauce on a housemade brioche bun with a side of pommes frites; and a steak frites dish for $95 features a 19-ounce American wagyu New York strip with glazed cipollini onion, béarnaise sauce, and pommes frites. The Wally’s $100 chicken comes with smashed fingerling potatoes, broccoli, truffle chicken jus, and shaved truffles.
The wine bar offers cheese and charcuterie plates as well as caviar with choices ranging from $115 to $975. Of course, the wine list features more than 100 wines by the glass.
Wally’s Wine & Spirits, Resorts World, 3000 Las Vegas Blvd. S. Open Sunday through Thursday from 8 a.m. to 2 a.m. and Friday and Saturday from 8 a.m. to 4 a.m.
