Another piece of the Virgin Hotels puzzle comes together with the opening of Money, Baby!, combining a sportsbook with food from Food Network star and culinary director chef Beau MacMillan and an experience courtesy of industry veterans and co-founders Justin Massei and Mikis Troyan of Clive Collective.
Davis Ink created the look of the 15,000-square-foot space that serves as an adult playground with a mid-century modern style. Customers walk through a tunnel adorned with hexagon lights before reaching a magical pink tree forest with custom cutout leaves, happy face graffiti, funky geometric fencing, a graphic ceiling, and a sprawling spoked soffit above the main bar.
The space features a 5,500-square-foot-patio overlooking the property’s resort pools. Diners can play cornhole and lawn games, or sit by the fire pits. Two DJ booths, located inside and outside, keep the energy going. A private dining room is only accessible by a secret speakeasy door.
MacMillan worked with executive chef Peter McQuaid and director of beverage Sheldon Wiley for a menu filled with dishes such as the Home Wrecker, an 18-inch all-beef hot dog, available Chicago style, reuben, bahn mi, or “Boss Hog” with barbecue braised pork and queso blanco; bone-in veal Parmigiana with smoked bacon marinara; and jumbo hot wings tossed in Buffalo, Korean barbecue, MB basil ranch, or Truffalo, made with Truff hot sauce featuring black truffles and red chili peppers.
For beverages, customers can order cocktails on tap, barrel-aged libations, and sports-monikered signature drinks including the Tea’d Up, with green tea- and cucumber-infused vodka, kiwi and ginger reduction, lemon juice, rose water, and topped with club soda, and the Passionate Pepper with jalapeño-infused tequila, passion fruit puree, white chocolate liqueur, and lime juice with a tajin rim. Prosecco and Michelada pops feature a strawberry lemonade Becky Hard Seltzer popsicle in a bath of Prosecco and a tequila-based bloody Maria-style popsicle in a bath of Mexican beer.
Sports fans can play with state-of-the-art golf simulators featuring interactive sports games. More than 200 HDTVs provide a 360-degree sports viewing experience, with an in-venue sportsbook for gamblers. When the games end, the sportsbook turns into a lounge with special programming and events on fight nights, industry nights, and resident and guest DJs, including At Sunset with Joe Kay & Soulection.
