One of the highest earning independent restaurants in Las Vegas is preparing to become even bigger, filing paperwork to increase the footprint of Joe’s Seafood Prime Steak & Stone Crab at the Forum Shops at Caesars.
Permits submitted earlier this month sought permission to demolish two adjoining, vacant suites and connect them to the very successful 12,000-square-foot restaurant. New documents now reveal an estimated construction budget of $1.5 million has been allocated to complete the interior makeover.
Joe’s launched in 2004 as an original tenant of the upscale shopping mall. The restaurant’s operators, Lettuce Entertain You, will also debut RPM Italian early next year. The Chicago import will move into the former Slanted Door space located a short walk from Joe’s main entrance.
The proposed upgrades are not expected to initially impact daily operations at Joe’s Seafood, where tuxedo-clad staff serve a steakhouse and seafood menu featuring Long Island oysters, Gulf of Mexico stone crabs, lobster tails, and bone-in prime steaks.
Different plans to remodel the restaurant were registered in 2018, but were halted before construction work began. An estimated completion date for the current changes has not been announced.
