Honoring Grito de Dolores, China Poblano at the Cosmopolitan of Las Vegas has “Viva Mexico” Sept. 15 through Oct. 13 with a tasting menu and selection of daily specials featuring traditional Mexican dishes, including the classic Chile en Nogada, alongside favorites such as Costilla de Puerco con Mole Amarillo, Tamal Yucateco Colado, Menudo, and Café de Olla.
