Bento boxes filled with katsu, sushi, and rice are usually found in Japanese, Taiwanese, and Korean cuisines. These lunch-ready kits generally combine pickled or cooked veggies along with sides ranging from gyoza to edamame. In Las Vegas, some high-end omakase restaurants such as Raku, Sushi Kame, and Kaiseki Yuzu pivoted to bento boxes to remain open for takeout and delivery service during the coronavirus pandemic. Others, mainly Korean and Japanese restaurants across the valley, continue to make these compact dishes that do all the thinking for diners with their combinations of appetizers and entrees.
