Culinary trailblazers back in the 1940s found a way to keep gamblers inside the resorts with cheap food, and lots of it. El Rancho Vegas, the Strip’s first resort, came up with the chuck wagon, the earliest version of the modern day buffet to turn up in Las Vegas. As UNLV’s Center for Gaming Research writes, “quantity was usually emphasized over quality.”

“The buffet filled a need for the casino, which wanted to keep its late-night gamblers happy, but didn’t want the expense of keeping a full restaurant open all night. Knowing that the hungry gamblers would be happy with good, plentiful meats and snacks, the El Rancho Vegas’s managers created the all-night chuck wagon. It may have seemed like no big deal at the time, but the casino buffet would become a Las Vegas signature restaurant.”

Those early chuck wagons might have served some hot dishes along with cold cuts. El Rancho Vegas’ Buckaroo Buffet only charged a dollar for all-you-can-eat fare when it opened.

Now, Las Vegas has more than 70 buffets spanning from Aliante to Henderson, Summerlin to the Strip, serving gourmet fare at a range of stations.

Palace Station’s Feast Buffet just went through a renovation. The 14,000-square-foot buffet originally debuted at the resort in 1988, ushering in an era of all-you-can-eat dining at the Station Casinos family of restaurants. With 394 seats, the buffet features six stations with global cuisine that come together in The Hearth, Wok This Way, Blazing Grill, Health Favorite, The Carvery, and Just Desserts, all divided by cooking style instead of by cuisine. The buffet, open from breakfast through dinner, features breakfast pizzas, pancake poppers, stuffed crescent rolls, a blistered BLT salad, watermelon feta salad, assorted Asian noodle salads, three-way pork belly, musubi, Spam fried rice, and more.

The Palms introduced A.Y.C.E. Buffet in November 2017 as a food-hall style buffet. The 9,685-square-foot, brightly lit space features hedge row-style low walls, plenty of plaid design motifs and the Roastery, Greenery, Hearth, World Pan, Smoke & Fire, Sweet & Light, and Revival themed food sections. For patrons not prone to indulgence, the Revival station is devoted to “wellness, power-boosting super foods and specialty vegan, vegetarian and anti-inflammatory cuisine,” including rainbow chard hash and cauliflower, and quinoa grits, while the Greenery offers salads, fruits and greens. For a more traditional buffet feast, international flavors at the World Pan include Moroccan lamb, congee, bao buns, and Stroganoff, while the Roastery has installed a white oak and mesquite chip burning grill for its 900-degree heat. Upgraded spins on familiar buffet fare includes smoked brisket Benedicts, cornmeal Johnny cakes, and a mini-duck cassoulet with white beans.

The live-action stations buffet at the Bellagio serves Taste of Bellagio, as well as more caviar and crab legs. During lunch and dinner service, patrons can head to four stations serving dishes from the other Bellagio restaurants. Diners can get Lago by Julian Serrano’s Malloreddus pasta with pork sausage and tomato sauce; Harvest by Roy Ellamar’s chopped spinach salad with Blue Lizard Farm’s bloomsdale spinach, bacon, blue cheese, asparagus, and tomato vinaigrette; and Noodles’ chicken pad Thai with flat rice noodles, chicken, egg, peanuts, bean sprouts, and onions. The buffet also now offers hot snow crab and Dungeness crab seven days a week, as well as a new dishes at the teppan station, such as quail, wild boar and lamb sausage. The caviar station features American, Tobiko, and salmon roe. A chef attendant overseeing the station creates blinis and miniature buckwheat waffles on the fly. Diners can add chopped egg, onions, and crème fraiche. Of course, the Buffet Chef’s Table features table-side carving from the rotisserie oven and its own desserts.
