The breakfast burrito is wholly an American concept, borne from the Southwest and Tex-Mex food. Tia Sophia’s, a Mexican cafe in Santa Fe, N.M., claims the honor of inventing the original in 1975 when it served a version with potatoes and bacon rolled up in a tortilla and served with chili and cheese on top. The Egg & I based its name on the 1940s-American memoir written by Betty MacDonald that was later made into a movie starring Claudette Colbert and Fred MacMurray. The breakfast burrito features scrambled eggs with pork sausage, house-roasted onions, green chiles, seasoned ranch potatoes, Jack and cheddar, wrapped in a flour tortilla and topped with salsa or pork green chili and fresh herbs.
