Gluten-free diets attract more than just those who see it as a way to eat healthy. Those with celiac disease or a wheat allergy find it a necessary way of life, and chefs in Las Vegas are responding to that by offering gluten-free options on their menus. Now everything from pizza and cookies come in gluten-free varieties. Fortune magazine found that "less than 1 percent of the population has celiac disease, approximately 6 percent are gluten intolerant, and … drum roll please … almost 30 percent of American adults are trying to avoid gluten."

Nonetheless, restaurants in Las Vegas still cater to gluten-free diners with special menus or entirely gluten-free kitchens that don’t touch wheat, barley and rye.

Here find 15 different Las Vegas restaurants, each of which serves gluten-free cuisine, perfect for those who are allergic or sensitive to eating gluten.
