This Mexican stew starts with marinated beef or goat that then simmers in broth for hours to acquire its tender meat. Birrierias dot Jalisco and its capital, Guadalajara, but birria can be found throughout Mexican cuisine. In Las Vegas, look for smaller Mexican restaurants that specialize in the dish. Order tacos dorados for a crispy version of birria de chivo (goat) or birria de res (beef), and dunk it in the consomé served on the side, or try birria in ramen, burritos, or even on its own in bowl.
