David Chang’s Majordōmo Meat & Fish at the Venetian specializes in grilled meats smoked over white oak and mesquite coals then brushed with savory salt butter. The smoked prime rib is cured for 24 hours in savory seasoned salad and smoked for five hours. Other options include a 21-day dry-aged New York strip and an 8-ounce wagyu strip. A group should gravitate to the smoked whole plate of short ribs meant to share.
