Though oddly located in a gas station, customers of Jefe’s don’t seem to care. Known to be overly generous with their servings of meat and cheese on their carne asada fries, the fries also come with beans, cheese, sour cream, guacamole and salsa fresca all piled on top, Jefe’s Taco Shop also delivers carne asada, pollo asado, carnitas, lengua, and cabeza tacos. Deep fried, mini, and rolled tacos in guacamole and cheese are also available.

Taqueria El Buen Pastor serves 100 percent original tacos from Guadalajara, Mexico. This traditional taco stand features tacos al pastor, seasoned pork served with pineapple, as well as tacos de buche or pork stomach and tacos de lengua or beef tongue. The restaurant has locations in Henderson and on the eastside and westside of Las Vegas.

Frijoles & Frescas has made its mark in Las Vegas now with six locations across the valley. The menu features eight different types of meat including fried pork or beef head. Each taco comes with beans, cheese, avocado, sour cream, and pico de gallo.

Located next to Sapphire Gentlemen’s Club, El Dorado Cantina serves non-GMO meat and organic vegetables and fish in its Mexican fare. Street tacos and El Dorado’s signature tacos come with a choice of meat such as steak or chicken, or customers can choose the vegetarian option of roasted chilies and poblano peppers as well. Originally opening in San Diego, California, in 1998, moving to Las Vegas in 2010 with its roster of Tijuana tacos. Once inside, customers must choose a line to stand in and order, dependent upon what type of meat they are selecting. Tacos El Gordo offers 10 different meat choices, ranging from carne asada and chorizo to less conventional selections such as caebza or beef head and sesos or beef brains. Tacos El Gordo even features Azteca, a combination of beef and cactus. Each taco is served on a corn tortilla and a choice of tomatoes, cheese, or lettuce. Four locations in Las Vegas.

Tacos & Beer offers 22 different tacos, including shrimp tacos, made with sautéed shrimp with guajillo chili, cilantro-lime slaw, pico de gallo, and guacamole. The menu here also has three vegetarian varieties of tacos to choose with jackfruit or grilled pineapple.

The home of the original margarita covers the taco gamut. Hussong’s Cantina at Mandalay Place serves traditional versions with barbacoa, al pastor chicken, and carnitas; specialty tacos with Baja fish or shrimp, pork belly, rib-eye steak, Kung Pow chicken, and salmon; and veggie varieties. Head over to the taco cart side of the menu at Border Grill at Mandalay Bay for gluten-free brisket taquitos, al pastor tacos, fish tacos a la plancha, or chicken tacos. Head out to the patio or just sit at the indoor patio.

Grilled skirt steak, Baja fish, calabacita (a summer squash) with zucchini ribbons and corn, guajillo braised short rib, chorizo and potato, and more tacos — served on corn or flour tortillas, or lettuce — make the menu, while each dish has a vegetarian option. For example, customers can swap out marinate portobello mushroom for the skirt steak, beer-batter cauliflower for the fish, jackfruit for the carnitas, or marinated cauliflower for the chicken al pastor.

Be sure to visit this Mexican eatery with plenty of time; patrons stand at a different station dependent upon what they want to order. While confusing initially, the food is well worth it. Meat options are many like typical carne asada and carnitas, but also featured are buche or pork stomach, cabeza or beef head, and tripas or beef guts. Also available is the soyrizo, a soy-based meat product with spices as a vegetarian option. The tacos are served on a soft corn tortilla, topped with onions, cilantro, and a choice of up to eight different salsas.
