For those who prefer their whiskey with a side of jazz, The Underground at The Mob Museum is the only answer. The speakeasy, located in the basement of the Mob Museum, is a password-only homage to the Prohibition era. Drinkers will can enjoy whiskey cocktails such as the Rattlesnake (rye, lemon, sugar, egg white, and absinthe) and the Blinker (rye, grapefruit, raspberry, and lavender) along with timeless recipes.
Oak & Ivy
Tucked inside the Downtown Container Park, this whiskey-focused bar features a rotating menu of seasonal cocktails along with a slew of mainstay classics. The menu at Oak & Ivy includes barrel-aged cocktails and whiskey versions that can be enjoyed in an upscale yet approachable setting that creates a great start to any night.
Herbs & Rye
Herbs & Rye just might be the ultimate hidden gem if it weren’t for the fact that it’s hiding in plain sight. Located just minutes from the Strip on Sahara Avenue, Herbs & Rye packs a lot of sophistication into one building. The cocktail list will be equally impressive to whiskey lovers, who will find cocktails organized by era. From the Prohibition era, Remember the Maine features rye and absinthe and the Gothic Age includes the Frisco, made with rye and benedictine.
Chef Emeril Lagasse’s steakhouse at the Venetian is always an excellent choice. Prefacing a steak dinner with a whiskey cocktail is an even better decision. Choices include the Cat’s Sazerac Twist made with Dad’s Hat rye whiskey, pomegranate and absinthe and He’s Peeled, made with Jameson Black Barrel and espresso. For those who prefer whiskey on its own, there’s an extensive collection, one of the biggest books in town. Note: Delmonico is closed for renovations until late December 2019.
Located inside the Venetian, The Dorsey is a stylish bar that features an extensive list of cocktails created by award-winning bartender Sam Ross. Whiskey cocktails include the Penicillin, made with scotch and lemon, and the Paper Plane for 2 made with bourbon and aperol.
Located inside The Cromwell, Bound’s drink list is divided into signature cocktails, classic cocktails, bartender’s favorites, and seasonal choices. The list features an Old Fashioned made with Woodford Reserve, the TJ’s Whiskey Sour made with Knob Creek bourbon and egg white, and the Frontiersman made with Bulleit rye, Drambuie, and Amaro Montenegro.
Scotch 80 Prime
Scotch 80 Prime at the Palms offers more than 500 whiskies, a collection valued at $3 million. Some of the rare finds include Macallan Fine & Rare 1937 single malt scotch. Diners can order themed flights with four three-quarter-ounce pours, or pick a Manhattan or Old Fashioned from the Timeless Cocktail Cart. Whiskey specialist Cody Fredrickson also has the Old Fashioned Globetrotter menu with the Elvis Has Left the Building, a nod to the King of Rock and Roll’s favorite snack, peanut butter and bananas, and the I’m Bringing Pickle Back, a playful twist on the pickle back shot made with Conor McGregor’s Proper Twelve Irish Whiskey and a house made potato-pickle syrup. For those who prefer an unforgettable whiskey experience to a simple glass of Scotch, the Whisky Attic offers whiskey tastings that start at $75. Located near the Strip, the Whisky Attic is home to the largest selection of whiskey in the United States. Selections include whiskies from America, Ireland, Japan, and Scotland.
Jean Georges Steakhouse
Jean Georges Steakhouse at Aria takes presentation to the next level by permitting diners to choose their whiskey from a tableside cart featuring more than 25 spirits including everything from Yamazaki 12 Year to Bunnahabhain XXV 25 Year. Whiskey lovers looking for a little extra pop of flavor can have their spirit smoked at their table.
Bavette's Steakhouse & Bar
Diners can pick from four variations on the Old Fashioned at Bavette’s Steakhouse & Bar at the Park MGM. The Old Fashioneds are made with Hibiki — Japan’s most highly awarded blended whisky; Old Overholt — America’s oldest continually maintained brand of whiskey, as well as Hardy Cognac and Belle Meade Bourbon.
Juniper Cocktail Lounge
The Old Fashioned receives a touch of modernization with the Maple Old Fashioned at Juniper Cocktail Lounge at the Park MGM. Barrel-aged maple syrup is mixed with WhistlePig 10 Year Rye Whiskey and Angostura bitters for a sweet and smoky take on the American staple.
Iron Chef Masaharu Morimoto celebrates whisky at Morimoto inside the MGM Grand with a cocktail that blends his passion for opulent meats and Japanese spirits. The wagyu Manhattan marinates Iwai Japanese whisky with wagyu beef before mixing the spirit with walnut bitters.
Alder & Birch
Located at the Orleans, Alder & Birch is a classic steakhouse that serves modern libations. One bright spot on the cocktail list is the Alder & Birch Maple Manhattan, which is made with Crown Royal Whisky, maple syrup and a candied bacon strip.
Whiskey connoisseurs can swing by Whiskey Down any time day or night for popular and rare American, Canadian, Irish, and Scotch whiskies. Located inside MGM Grand, the 24-hour spot offers more than 50 varieties of whiskey and is outfitted with overstuffed leather chairs that are ideal for sitting and sipping. Hazel Coffee & Cocktails
Mandalay Bay’s lobby bar Hazel offers modern and classic takes on cocktails, including the Old Fashioned. The classic version features Henry McKenna 10 Year bourbon, demerara syrup, angostura bitters, and an orange peel, while the modern interpretation uses Laird’s apple brandy, Kikori Japanese whiskey, ginger syrup, and Angostura bitters, served smoked in a pipe-like glass.
Libertine Social is helmed by James Beard Award-winning chef Shawn McClain and mixologist Tony Abou-Ganim, whose bottled cocktails include the Bardstown Sling made with Maker’s Mark and peach puree. Other whiskey options at the Mandalay Bay restaurant include the Toki Highball made with Suntory whiskey and yuzu spritz, and poured from a Toki Highball Machine that gives it five times the carbonation of soda water, keeping this whisky-based drink chilled, smooth and continuously bubbling.
