Caviar is one of the priciest appetizers available not only in Las Vegas, but all over the world. Caviar can be up to $2,500 a pound and is served on mother of pearl spoons in order to preserve their taste. Simply put, caviar is made from separated and salted fish eggs. This caviar is the roe from sturgeon found in the Caspian and Black Seas. There are varieties of caviar like the Osetra, Beluga, American osetra and Siberian sturgeon to name a few. Caviar is often served with a side of crème fraiche and small pieces of buttered toast or blinis. The “Colors of Caviar” is a signature dish at Guy Savoy at Caesars Palace and for good reason.  Featured on the signature nine-course menu, the “Colors of Caviar” is an assortment with a caviar gelée at the bottom, a caviar cream in the middle and on the top, pure caviar. Guy Savoy also introduced a caviar room, which features signature caviar dishes like the “Colors of Caviar,” different caviar by the ounce and Langoustines with royal osetra. Restaurant Guy Savoy also has its own Caviar Room with a menu of roe to pair with champagne.
