Caviar can be up to $2,500 a pound and is served on mother of pearl spoons in order to preserve their taste. Simply put, caviar is made from separated and salted fish eggs. This caviar is the roe from sturgeon found in the Caspian and Black Seas. There are varieties of caviar like the Osetra, Beluga, American osetra and Siberian sturgeon to name a few.
