Gov. Steve Sisolak extended his state’s stay-at-home order through May 15, and since noneseential businesses closed statewide on March 17, some restaurants chose not to offer takeout and delivery service. Until now. A handful of restaurants reopened to offer dishes spanning Italian, Vietnamese, or breakfast fare to an ever-changing menu of American food or pizzas. Pho Aimie, the Vietnamese restaurant with locations in Spring Valley at 8390 S. Rainbow Blvd., 702-776 7017, and in North Las Vegas at 2696 W. Ann Road, 702-522 8988, both reopen today from 11 a.m. to 8 p.m. daily. Pancho’s Mexican Restaurant at Downtown Summerlin reopened for curbside pickup Friday, May 1. The Mexican restaurant is offering a 15 percent discount on all food items as well as 20-ounce house margaritas to-go. The restaurant will be open Wednesday through Sunday from 11 a.m. to 7 p.m. The menu includes a burrito del mar with sautéed shrimp, genuine crab, onions, tomatoes, bell peppers, and rice, then deep fried and covered with salsa verde especial and topped with melted cheeses and sliced avocados and sour cream; pollo asado with a boneless breast of chicken marinated with achiote, garlic, and Mexican herbs, grilled Yucatan style, and served with an enchilada; and chimichanga de pollo, a flour tortilla filled with spiced shredded chicken and cheeses, then deep fried. Raku, the Japanese robata restaurant, reopened for takeout service daily from noon to 8 p.m. on April 24. The restaurant from multiple James Beard Foundation semifinalist nominee for Best Chef Southwest Mitsuo Endo now serves bento boxes filled with chicken teriyaki, salmon, skirt steak, and more. Kabuto, the exceptional sushi restaurant on Spring Mountain Road near Decatur Boulevard, reopened for takeout service on Friday, May 1. The restaurant instead will focus on four different dishes. San shoku don features blue fin tuna, yellowtail, and salmon on sushi rice for $25. Bara chirashi combines fresh fish and vegetables on well-seasoned rice for $26. Jo nigiri brings eight pieces of nigiri for the day for $28. Finally, futomaki for $16 combines salmon, yellowtail, anago, and vegetables. Cafe Sanuki reopened with a pivot toward a new menu of sushi or sashimi platters, bento boxes, sushi rolls, and more for takeout and delivery via GrubHub, DoorDash, Uber Eats, and Postmates.

“We are not doing our normal menu fare until we can open up dining,” owner Henry Fan says. “However, we are still offering our brand promise of fresh comfort food at neighborhood prices.”

The bento boxes feature miso soup, salad, a California sushi roll, gyoza, shrimp tempura, rice, and a choice of entree such as pork tonkatsu, chicken karaage, rainbow sushi, or salmon teriyaki. A 40-piece sushi platter offers rolls and nigiri, while a smaller 18-piece set includes salmon, tuna, unagi, and more.
