Las Vegas sure knows how to drink coffee. Thirteen new coffee shops and expansions brewed up new concoctions and classic go-to drinks across Las Vegas and Henderson. Here’s a look at some of the more interesting coffee shops that recently opened.

The Royal Coffee Roasting Co. replaced a trio of Black Rock Coffee Bars, built from scratch by the Oregon franchise last year. Each offers a drive-thru at 45 E. Silverado Ranch Boulevard in the southeast, plus 5608 S. Rainbow Boulevard, 7565 S. Rainbow Boulevard and 4835 Blue Diamond Road in the southwest. The family-owned company partnered with Idaho’s Happy Day Brands for its roastery source, creating natural, non-GMO, and organic products.

Founders Coffee expanded to St. Rose Parkway in Henderson with Red Eye, Dark Roast Cold Brew and Founders Blend classic flavors, along with lattes in lavender white chocolate and rose tea renditions and blended frappes such as the almond butter and jelly and matcha monster. This location features a drive-thru, takeout, and delivery at Saint Rose Parkway and Amigo Street. The all-day food menu offers toasts such as the avocado with sun-dried tomato, chive, and garlic aioli and deluxe lox toast with smoked lox, smoked lox cream cheese, red onion, chopped boiled egg, capers, and chives. Diners can also order sandwiches and waffles including the breakfast waffle with egg, bacon, cheese, and maple butter; quiches; and breakfast bowls including Founders’ vegan overnight oats with chia seed, coconut, coconut milk, vanilla, and blueberries.
