California halibut served with Napa cabbage, pickled clams and Meyer lemons will be served for the third course. Hawthorn Grill at the JW Marriott has a New Year’s Eve seven-course dinner for $125, and diners can pair with a bottle of champagne for $149. The menu offers chilled king crab, foie gras mousse, sunchoke soup, blood orange sorbet, a choice of lobster, filet mignon, or salmon, black forest cake, and a variety of mignardises from 5 to 10 p.m.

Hamptons at Tivoli Village invites all to their New Year’s Eve dance party starting at 9 p.m. with a four-course dinner. At 11 p.m., a live DJ will be spinning the greatest oldies hits. The $95 per person includes oysters Rockefeller, braised veal cheeks, brandied lobster bisque, golden beet carpaccio salad, salmon mignon, tenderloin Oscar, garlic and morel stuffed airline chicken, and Grand Marnier chocolate soufflé, bananas foster, and stuffed lemon ricotta beignets.
Honey Salt’s New Year’s Eve extravaganza kicks off at 9 p.m. and continues throughout the night to ring in 2018 for $79 per person. The dinner starts with lobster toast with smoked trout roe, seabeans, and Meyer lemon aioli; followed by a choice of appetizer, either winter vegetable salad, classic beef tartare, or salmon crudo. Entree choices include roasted black cod with saffron potatoes, local citrus, fennel, and shellfish broth; prime angus short rib with roasted rainbow carrots, cipollini onions, celery root puree, and black garlic jus; or heirloom squash risotto with Tuscan kale, pepitas, parmigiano Reggiano, and shaved truffle. North Italia celebrates New Year’s Eve with a $55 per person menu on Sunday, Dec. 31, from 3-10 p.m. Diners choose roasted sweet potato soup with calabrian chili and walnut pesto; chanterelle mushroom ragout, beef carpaccio with dolce gorgonzola, a leafy Italian salad, prosciutto bruschetta with crescenza cheese, or arancini with crispy mushroom risotto stuffed with scamorza cheese. Main course choices include grilled branzino with cipollini onion, fennel, broccolini, farro, lemon and butter; rosemary chicken with roasted seasonal vegetable and lemon pan sauce; diver scallops with parmesan risotto, roasted butternut squash, Brussels sprouts, crispy shallot and pancetta; burrata tortelloni with roasted mushroom, swiss chard, porcini brodo, pecorino and saba; Bolognese with traditional meat sauce, tagliatelle noodle and grana padano cheese; or red wine glazed short rib with heirloom carrot, Swiss chard and creamy mascarpone polenta. For dessert, a choice of salted caramel budino with crème fraiche and maldon sea salt; ricotta panna cotta with fig and date compote, lemon granita and amaretto biscotti; or tiramisu with Kahlua-soaked ladyfingers and mascarpone mousse.
From now through Jan. 3, 2018, Fleming’s has a New Year’s Eve surf and turf three-course menu, featuring an 8-ounce filet mignon paired with an Australian lobster tail served with a sautéed mushroom medley, merlot salt and cabernet demi-glace. The meal begins with a choice of lobster bisque or seafood Louie wedge dalad, featuring colossal crabmeat and shrimp. To finish, either warm butter cake over a chocolate sauce with candied walnuts, Chantilly cream and caramelized Bosc pears, drizzled with caramel sauce.
Andiron Steak & Sea in Downtown Summerlin has a New Year’s Eve prix fixe menu for $95 per person with an optional $49 beverage pairing or $75 for bottomless Moet. Dinner starts with salmon rillettes blini, followed by a choice of roasted chestnut soup, chilled king crab salad, or burrata. Next, diners choose roasted mushrooms risotto, a whole roasted lobster, or wagyu New York strip. Dessert options include a doughnut trio, brown butter lemon pie, or chocolate hazelnut bar.
Wolfgang Puck Bar & Grill in Downtown Summerlin has an oyster and shrimp platter with port wine mignonette and lemon for $25; truffle risotto with black Perigord truffle and parmesan for $29; seared diver sea scallops with celery root puree and butter braised chard for $37; prime New York strip with parsnip potato puree and caramelized Brussels sprouts for $46; and chocolate Oreo cake with cheesecake mousse and French vanilla buttercream for $12.
Katsuya at SLS has potato-wrapped Japanese Rockefeller made with miso, leek, bacon and baby spinach, priced at $19; Hokkaido Scallops, with mirepoix, junami ginjo sake, yuzu, caviar, shizo, and beurre blanc, priced at $28; and surf and turf, with a 4-ounce Wagyu Strip, Santa Barbara Uni, toki whisky, negi and lobster bordelaise, priced at $60.
Cleo at the SLS has Spanish octopus with cardamom yogurt, harissa and Moroccan carrot salad, priced at $19; King Cole duck with chickpea mujadara, orange pudding and a honey balsamic duck jus for $36; and a coffee cocoa rub prime ribeye steak paired with smoke eggplant cream, Greek yogurt, marble potatoes and pickled pepper, priced at $42.
Sinatra at Encore Las Vegas’ five-course celebration dinner includes smoked scallop and lobster salad, ravioli al uovo with shaved white Alba truffles; turbot and spot prawns al Cartoccio; and a beef duo of beef brasato al Barolo, and roasted Wagyu ribeye with carrot puree, crispy Brussels sprouts and potato and mushroom croquette. For dessert there is an irresistible warm Nutella tortino with mascarpone gelato and grappa zabaglione. The cost is $375 per person and reservations start at 9 p.m.
Diners can choose from the a la carte menu or three-course prix fixe for $99 per person at Jardin at Encore Las Vegas. The prix fixe celebration menu features king crab Rockefeller and lobster bisque; bacon-wrapped sea scallops with maple glaze and baby kale Caesar salad; Wagyu strip loin with twice baked truffled potatoes, haricot verts and foie gras sauce.
Allegro at Wynn Las Vegas has a prix fixe dinner for $155 per person that includes a Prosecco cocktail. Dinner, with reservations starting at 8 p.m., starts with a family-style appetizer of shrimp Catalana, house smoked salmon with sea urchin and caviar; razor clams gratin and house made burrata Caprese; a tableside presentation of risotto with porcini mushrooms and black truffle; a choice of veal chop Parmigiana, roasted branzino or roasted beef tenderloin Wellington with mushrooms, mustard and Prosciutto.
Mizumi at Wynn Las Vegas has a five-course prix fixe menu for $295 per person starting at 9 p.m. with crispy Big Island abalone with avocado, wasabi crème fraiche, wafu vinaigrette and Osetra caviar; furikake and panko crusted Tai Snapper Nitsuke with soba noodles, Yakibara nori, dashi Konbu broth and mitsuba; Robatayaki grilled short rib Kahuni with black truffle nishime vegetables and yakitori sauce; the chef’s selection of sashimi, nigiri sushi and maki sushi; and a 2018 celebration dessert. Andrea’s at Encore Las Vegas has a prix fixe dinner starting at 9 p.m. for $295 per person. The dinner includes caviar en brioche with yuzu kosho crème fraiche; a sampling of specialty rolls; poached lobster tail with coral spätzle, rice wine béarnaise and black truffle and braised Wagyu beef short rib with koshi-hikari white truffle risotto. The evening includes a six-course gala dinner and a Champagne toast.
