Michael Mina

Michael Mina’s eponymous restaurant at the Bellagio has a caviar cart for $155 to $455. The service comes with ramekins filled with minced red onion, egg yolks, egg whites, chopped chives and whipped creme fraiche along with blinis, mini potato cakes and cut toast. Or order Mina’s signature caviar parfait, a dish he created for his with on their honeymoon in Hawaii. The story goes that he wanted a special breakfast for his young bride using all her favorite foods, so he got creative with the room service menu and ordered hash browns, egg salad, smoked salmon, whipped lemon crème fraîche and caviar. Mina used hash browns as a base for a caviar tower creation now known as Michael’s Signature Caviar Parfait.

"Colors of Caviar" is a signature dish at Michelin star Restaurant Guy Savoy at Caesars Palace. Served on the Guy Savoy Signature Menu, guests can enjoy this collection of caviar made up of a caviar gelée at the bottom, pure caviar at the top and a caviar cream in between as one of the beginning courses on the nine-course menu priced at $258 per person.

The caviar portion of the restaurant's dinner menu features Golden Osetra, priced at $290, Osetra, priced at $200 and Naccarii, from Chef Ramsay's trip in 2008, priced at $100.
