2008_10_hasmaps.jpgNow is the time to celebrate the return of white truffles, the swanky fungi found in Italy and now appearing at some of the best restaurants in Las Vegas. It's still early in the season, but already the pricey delight has made its way to restaurants here.

Here's a guide to the Vegas restaurants that have started serving white truffles. Because it's so early in the season, call ahead to ensure the ingredient is on the menu. Rest assured that when November rolls around, they will be far more widely available.

Le Cirque

This French must-try restaurant at the Bellagio has creamy polenta with Maine lobster and Alba white truffles on the fall menu as well as a seven-course white truffle tasting menu for a limited time.

The restaurant named for Old Blue Eyes has a truffle tasting menu for $225 from executive chef Theo Schoenegger. Look for Cappesante, a diver scallop, pomegranate, celery root tartar; Uovo in Raviolo, a white truffle-scented egg yolk, Bufala ricotta and fine herb filled raviolo; Piatto del Re with red wine-braised veal cheeks over soft polenta, truffled cacciota cheese and a quail egg sunny side up; and Croccantino di brioche with a caramelized brioche, quince and vin santo puree, buttermilk and black pepper ice cream on the menu.

At Restaurant Guy Savoy, the white truffle menu goes for $420. The menu includes scallop cooked and raw with cauliflower variations, pumpkin soup with a poached egg and white truffles, Alba white truffle risotto, poached Guinea hen with fall vegetables with white truffles, Brie white truffle, grapefruit terrine with Earl Grey tea sauce and Noir. Guests can order dishes a la carte as well including the pumpkin soup for $125, the Guinea hen for $135 and the risotto for $110.

For one night, March Bacchus is serving up a white truffle and wine dinner for $275. On Oct. 25, look for Alex Stratta’s five-course tasting menu with caviar blinis; seared scallop with cauliflower cream and white truffles; a veal sweetbread and duck egg ravioli with white truffles; American Waygu beef with Bordelaise sauce and white truffles and warm camembert with white truffles. All are served with wines from Lucien Le Moine.

Joel Robuchon’s more casual restaurant at the MGM Grand adds white truffles to La Cebette, a white onion tart with smoked bacon, quail egg “mirror” and green asparagus; Les Ravioles, foie gras ravioli in a warm chicken broth with herbs; L’Ceuf, an egg cocotte topped with a light mushroom cream; Le Macaroni, macaroni in a Comté gratin, green asparagus and smoked veal bacon; Les Spaghettis; and La Saint-Jacques, a sea scallop cooked in the shell with chive oil.

The upscale pizzeria now features white truffle shavings on the Tartufo Pizza. They join the black truffle, parmesan crema, fontina fontal, roasted cremini and over easy baked egg already on the pizza.

Spago plans to serve white truffles over any pasta dish throughout the season.
