<p>The ode to the city’s casino greats sits on the 60th floor of the resort with killer views of the Strip</p> <p id="9QOqX4">Downtown’s new <a href="https://vegas.eater.com/venue/circa">Circa</a> continues to reveal its new outlets with <a href="https://vegas.eater.com/venue/legacy-club">Legacy Club</a>, the swanky lounge at the top of its 458-foot tower opening on December 28. The lounge features stunning views of Las Vegas along with fire pits to keep customers warm on the outdoor terrace. </p>
<p id="qtqIzb">Customers take a dedicated elevator to the 60th floor to reach the Legacy Club, an ode to many of Vegas’ founding pioneers and icons. At the entrance, the lounge features 11 custom metal busts of Jackie Gaughan, best known for his ownership of the El Cortez; Benny Binion, who opened Binion’s Horseshoe in Downtown Las Vegas; Jay Sarno, who founded <a href="https://vegas.eater.com/venue/caesars-palace">Caesars Palace</a> and <a href="https://vegas.eater.com/venue/circus-circus-hotel-casino">Circus Circus</a>; Kirk Kerkorian, who opened the International Hotel in 1969, the <a href="https://vegas.eater.com/venue/mgm-grand">MGM Grand</a> Hotel in 1973, and the MGM Grand in 1993; Sam Boyd, who invested in the Sahara, became general manager and partner at The Mint in Downtown Las Vegas, opened the California in 1975, and co-founded Boyd Gaming; Steve Wynn, who opened the <a href="https://vegas.eater.com/venue/golden-nugget">Golden Nugget</a>, the Mirage, Treasure Island, the Bellagio, and <a href="https://vegas.eater.com/venue/wynn-las-vegas">Wynn Las Vegas</a>; William Bennett, who established Circus Circus Enterprises and owned the Sahara; Bob Stupak, who opened Bob Stupak’s Vegas World; Frank Fertitta of Station Casinos fame; Barron Hilton, who ran the International and the Flamingo; and Howard Hughes, who owned the Dunes, the Sands, Frontier, Silver Slipper, Castaways, and Landmark. </p>
<p id="Q96YGW">Another ode to the city’s history inside the lounge showcases black-and-white photos portraying each of the legends, as well as Mayor Carolyn Goodman and Oscar Goodman. The lounge also features a display of 1,000 ounces of pure gold. A ticker atop the display of Circa-branded gold bars shows their combined value based on the current price of gold.</p>

<p id="od5ng2">The 8,400-square-foot lounge features couches in the main lounge, fire pits and banquettes on the outdoor terrace, and stools at the centerpiece bar.</p>
<p id="HwjejK">Customers can order Vegas twists on classic drinks, such as the Desert Sunset Martini, a spin on the breakfast martini, invented by Salvatore Calabrese. The typical orange marmalade has been replaced with a white peach puree. A Sunset Spritz, a riff on the Aperol Spritz, comes with Schofferhofer Grapefruit Hefeweizen. The namesake Legacy Club cocktail, a variation on the Clover Club, uses Absolut Elyx and a prickly pear syrup. And the Nevadan is a Manhattan that uses Frey Ranch Rye, a rye whiskey distilled in Northern Nevada and aged for five years. . </p>
<p id="U3i74N">The lounge offers a sunset package for $75 per person that includes outdoor fire pit seating for two to 12 people, two specialty cocktails, a Champagne toast at sunset, and views of the skyline. <p>A by-the-numbers look at the first casino built from the ground up since 1980, debuting in Downtown Las Vegas </p> <p id="RnzyPW">The first new casino built from the ground up since 1980 makes its debut in Downtown Las Vegas. The 1.25 million-square-foot <a href="https://vegas.eater.com/venue/circa">Circa</a> revealed the first five floors of the swanky resort at midnight on October 28, with the largest sports book in the world, a year-round pool experience, four restaurants, and an <a href="https://vegas.eater.com/2020/6/25/21302044/circa-adults-only-resort-las-vegas-opening-december">adults-only experience</a>, open only to those 21 and older. Owner Derek Stevens broke ground on the resort in February 2019, and plans to reveal the hotel rooms in December. </p>
<p id="nehBA7">Visitors can park at Garage Mahal, an eight-story parking structure with 982 parking spaces across the street from Circa offering its own ride-share hub on the third floor. An art installation designed by Egads dubbed <em>Time of Your Life</em> chandelier spans 22 feet and greets drivers as they enter. </p>

To the left of the garage entrance sits Jack Pots, a coffee shop created by Paul Saginaw and Steve Mangigian. Customers can find Michigan’s Zingerman’s coffee, along with a custom blend exclusive to Circa. </p>

<p id="kJC8Po">Head to the right to find <a href="https://vegas.eater.com/venue/saginaw-s-delicatessen">Saginaw’s Delicatessen</a>, a 24-hour deli from Paul Saginaw with a seven-foot sculpture of the owner greeting customers at the front. The menu features reubens, matzo ball soup, onion rings, salads, latkes, chopped liver, breakfast specialties, and more.</p>
<p id="IAcISk">“I’d tell you to order the corned beef Reuben, the king of sandwiches,” Saginaw says of what to come for. “It’s really the quintessential delicatessen sandwich. … It’s as good as a five-star meal.”</p>
<p id="HBA2kX">On the dessert side of the menu, Saginaw’s features favorites from his Ann Arbor, Michigan, original deli that opened 39 years ago. Traditional cheesecake, carrot cake, a Boston cream pie, sour cream coffee cake, and “a really great pecan pie that can make you cry” make the menu. The deli even serves a 99 cent shrimp cocktail from 3 to 5 a.m. </p>

<p id="xtnFxP">Those who want to head up to <a href="https://vegas.eater.com/venue/stadium-swim">Stadium Swim</a> with its six pools, two spas, 15,000 square feet of wet space, and 4,000-person capacity can queue up in the next space to the right. </p>
<p id="R6YXlT">Stadium Swim offers a 143-foot by 40-foot LED screen with 14 million megapixels at the entrance. Among the amenities, two swim-up bars, 30 cabanas, 38 daybeds, 337 chaise lounges, and food from Saginaw’s Deli and Victory Burger & Wing Co. Customers can order from iPads while continuing their sunbathing. At front of the venue, a bar featuring frozen cocktails awaits. </p>

<p id="DIlx7w">Back down on the second level, visitors will find boutiques with swimwear and resort attire, followed by an art gallery from Chris Ihle. A life-size replica of Stevens made from Lego blocks, Ihle’s medium, greets customers. </p>

<p id="3dQp2u">Next, <a href="https://vegas.eater.com/venue/victory-burgers-wings">Victory Burger & Wings Co.</a> from the founding family of <a href="https://vegas.eater.com/venue/american-coney-island">American Coney Island</a>, the hot dog restaurant at the D Las Vegas, also owned by Stevens. Chris Sotiropolous and his sister Grace Keros created the sports-themed restaurant that has the Vegas Martini burger, an ode to the Michigan favorite olive burger. The menu also features jumbo wings, salads, and milkshakes mixed with breakfast cereals. </p>
<p id="ZmyDX8">Overhead, the pendants are all in the color of a football, while the chairs take on the hue of a basketball. The cashier stand looks like a baseball dugout, and a scoreboard hangs from the ceiling. </p>

Gamblers can sit in The Dugout, a VIP area with 28 seats in front of the screen; The Legends Club with 18 recliners behind The Dugout; The Champions Club with booth seating; The Circa Club Upper and Circa Club Lower with 14 booths; or the North and South Stands with tiered viewing and 164 seats. Victory Burger and the resort’s barbecue restaurant, <a href="https://vegas.eater.com/venue/project-bbq">Project BBQ</a>, serve food for the experience. </p>

<p id="1weOmy">Out of all the bars at Circa, Vegas Vickie’s brings a truly Las Vegas experience, anchored by the original neon sign of Vegas Vickie, the kicking cowgirl. The 25-by-20-foot neon sign that sat outside Glitter Gulch originally debuted in 1980, and Stevens acquired it in 2016. YESCO, the neon sign company, spent seven months restoring the sign, complete with a repaired kicking leg. </p>
<p id="rwzumU">The lounge features seasonal cocktails and vintage drinks with sheer drapes to offer some privacy. Artwork in the middle of the bar creates a V shape in honor of the stunning sign that visitors can see from the second floor down to the basement in a three-story atrium. </p>

Dakake, a long-time Las Vegas chef who helmed <a href="https://vegas.eater.com/venue/n9ne-steakhouse">N9NE Steakhouse</a> and <a href="https://vegas.eater.com/venue/scotch-80-prime">Scotch 80 Prime</a> at the Palms. His regal steakhouse spans 3,200 square feet with eight rooms that can expand and contract to accommodate large groups to intimate settings. The restaurant serves table-side dishes along with a vegan menu and steakhouse favorites. </p>
<p id="fk22SN">Dakake teams up with Yassine Lyoubi, Marco Cicione, and Donnie Rihn for this steakhouse filled with vintage glamour, including artwork from 40 artists adorning the walls. Navy and oxblood walls, warm brown and white oak parquet floors, walnut millwork throughout, burnished brass furnishings, and antique mirrors decorate the space. One room features an illuminated three-dimensional, rose-inspired ceiling while another comes with a lighted olive tree.</p>

<p id="zDgwJ8">Next door, Project BBQ, a permanent food truck serving Carolina barbecue dishes such as brisket, pulled pork, chicken, and the garbage bowl with a little of everything on top of kettle chips. Chef Rex Bernales partnered with Rob Baker, Mo Pierce, and Steve Hamlin on the restaurant near the Main Street Stage on the Fremont Street Experience. </p>
<p id="FulOtY">Next up for Circa, the opening of the remainder of the resort, including 777 hotel rooms, with 512 opening on December 28. At the top of the resort, the Legacy Club on the 35th floor features a view of the city, five fire pits, and a 10-foot display of 1,000 ounces of gold. </p>

<p>The new restaurant features olive burgers, waffle fries, and cereal-studded milkshakes</p> <p id="amjNh2">Olive burgers, waffle fries, and cereal-stuffed milkshakes arrive at a new sports bar opening inside <a href="https://vegas.eater.com/venue/circa">Circa</a> at the end of the month. <a href="https://vegas.eater.com/venue/victory-burgers-wings">Victory Burger & Wings Co.</a> from the owners of <a href="https://vegas.eater.com/venue/american-coney-island">American Coney Island</a> at the D Las Vegas anchors the three-story screen in Circa’s sportsbook and features its own radio booth. </p>
<p id="kvbU1E">Co-owner Chris Sotiropoulos says the conversation about a burger restaurant started in 2017 when Circa and D Las Vegas CEO Derek Stevens sat at Long Bar and talked about what a sports bar might look like at the new resort that opens on October 28. Sotiropoulos says he grabbed a napkin at the bar and started jotting down ideas, then called his suppliers the next day to order new products to start testing dishes. </p>
<p id="U6PTG0">The burgers use a blend of Black Angus ground beef, short ribs, and brisket. The 8-ounce burgers grilled on a flattop come in six varieties, and diners can swap out turkey burgers, grilled chicken, or an Impossible burger for any of the combinations. </p>
<p id="53rFei">Sotiropoulos says the Vegas Martini burger brings a twist to the Michigan staple olive burger. Instead of just mayonnaise, he uses a mix of cream cheese, mayo, and chopped olives in the burger with cheddar cheese on top. </p>
<p id="svb7MA">“In Michigan, in the Midwest, olive burgers are kind of a little bit of a staple,” he says. “It’s only made with mayonnaise and chopped green olives.” But when he worked as a vice president for a national restaurant company, he traveled to college towns and always ate an olive burger when he saw it on the menu. A restaurant in Wisconsin turned him on to adding cream cheese to the mix. </p>
<p id="Fq0aQR">Sotiropoulos credits his sister Grace Keros, who co-owns the company with him, with concocting the fondue burger with a creamy blanco cheese over fire-roasted red peppers, artichokes, and tomatoes.</p>
<p id="aLbNJB">The namesake Victory burger comes with cheddar cheese and thick-sliced bacon while the Victory Loco burger arrives topped with a fire-roasted combination of corn, poblano pepper, and onion, pickled jalapeños, creamy blanco cheese sauce, and sliced avocado. Other options include a barbecue burger and a classic. </p>

<p id="tR6075">Sotiropoulos says the jumbo-sized breaded chicken wings come coated in Buffalo, barbecue, garlic Parmesan, or red chili sauce with homemade ranch, bleu cheese, and jalapeño ranch for dips. </p>

<p id="dnLCkx">He says dishes using simple ingredients form the staple of his menu. Nachos, where every chip has topping on it, sweet breaded onion rings that pay homage to the version he serves at American Coney Island, and fried green beans bring a different spin to sides. “You know, everyone needs a vegetable on the menu, and we figured, you’re on vacation, let’s make it fried.”</p>
<p id="RMIlgD">Waffle fries, with a sweet potato option, also make the menu and can be topped with blanco queso and bacon. </p>

<p id="c89Bgq">For milkshakes, Sotiropoulos turned to his childhood for inspiration. “Everyone is doing kind of over-the-top shakes,” he says. So instead of sprinkles or syrups, Victory adds cereals to the mix, with Captain Crunch Berries, Chocolate Cocoa Puffs, and Cinnamon Toast Crunch playing the starring roles. </p>
<p id="ao91gI">The sports bar also plans to serve beers, with some local options. The restaurant offers counter-service ordering, along with the option to place orders via iPad from the sportsbook. </p>
<p id="lRfZC1">“We really put our heart and soul into everything we did,” Sotiropoulos says. “It’s one of those things that we made sure that we put our taste spin on everything because we tried to create this phenomenal food experience but at the same time, make sure you feel like you’re part of the family.”</p>

<p>8 East opens at Circa when the resort debuts</p> <p id="ml2KT5"><a href="https://vegas.eater.com/maps/best-downtown-las-vegas-fremont-east-dining">Fremont East</a>’s <a href="https://vegas.eater.com/venue/le-thai">Le Thai</a> really helped the entertainment district across Las Vegas Boulevard from the <a href="https://vegas.eater.com/venue/fremont-street-experience">Fremont Street Experience</a> get its legs under it when it opened in 2011. It paved the way for the neighborhood that now features more than 20 dining destinations and allowed the chef to open a second location near the Scotch 80s. Now Dan Coughlin, the chef and owner of the restaurant, gets ready to give Downtown diners a new excuse to visit when he opens his pan-Asian restaurant <a href="https://vegas.eater.com/venue/8-east">8 East</a> at <a href="https://vegas.eater.com/venue/circa">Circa</a> on October 28, two months ahead of schedule. </p>
<p id="y9o3He">Coughlin plans to serve Chinese, Japanese, Vietnamese, Korean, and Thai dishes at the new resort with rare spirits behind the bar. The menu features small plates meant to share, a variety of skewers, and dishes served family style, along with classic and creative desserts. </p>
<p id="xMCdqk">The small plates menu offers crispy pork belly bacon that’s slow cooked for 10 hours before it’s lightly fried and served with a side of tamarind sauce. His Tokyo crepe comes with sauteed wild enoki, oyster, and shiitake mushrooms, as well as fried tofu, cilantro chimichurri, Kewpie mayo, and soy glaze. A pork belly bao uses smoked porchetta. Coughlin tested his beef and chicken skewers out on diners at Le Thai before coming out with a rendition with green sauce.</p>
<p id="GH2VtZ">Diners can order a five-spice rib-eye steak seasoned with star anise, cloves, Chinese cinnamon, Sichuan peppercorns, and fennel seeds and served with butterfall sauce. A brisket fried rice and whole lobster fried rice, dan dan noodles with ground pork and a Sichuan sesame sauce, and ramen with osso bucco round out some of the family-style dishes teased. </p>
<p id="baeLJn">Coughlin says he worked on fusion dishes and techniques to incorporate at 8 East that he tested at his Thai restaurant and at home for family and friends, such as salt and Sichuan pepper chicken wings and cumin lamb lollipops that will be served with Sichuan, Chengdu, and Thai sauces.</p>
<p id="FVmT5i">On the dessert menu, find Thai coffee crème brûlée, matcha green tea ice cream, and an Asian tiramisu.</p>
<p id="z3CIql">The restaurant plans to serve rare Japanese whiskies and sakes, as well as specialty cocktails such as the Singapore Sling and an Old Fashioned, and a curated wine list featuring natural, biodynamic selections. The drink menu also will highlight a Japanese Whisky tasting flight.</p>
<p id="pmCdjm">The design of 8 East uses organic and natural design elements. At its entrance, customers can see a wall art installation filled with traditional Maneki-neko waving cats, symbolizing good luck in the Japanese culture.</p>
<p id="hc9fA0">Circa promises to only allow patrons 21 and over inside the 1.25-million-square-foot resort and casino, which will have the world’s largest sportsbook and a pool complex, Stadium Swim, open 365 days a year, and a number of drinking and dining options when it opens the first five floors on October 28. </p>

<p>Table-side presentations, surf and turf, and vegan dishes make the menu at Barry’s Downtown Prime</p> <p id="MHoHWP"><a href="https://vegas.eater.com/venue/66398/barry-s-downtown-prime">Barry’s Downtown Prime</a>, the new steakhouse opening at <a href="https://vegas.eater.com/venue/circa">Circa</a> in October from chef Barry Dakake, hypes up its menu filled with staples and table-side presentations. Dakake, formerly at <a href="https://vegas.eater.com/venue/scotch-80-prime">Scotch 80 Prime</a> and <a href="https://vegas.eater.com/venue/n9ne-steakhouse">N9NE Steakhouse</a> at the Palms, teams up with Yassine Lyoubi, Marco Cicione, and Donnie Rihn for this steakhouse filled with vintage glamour and classic dishes with a modern twist. </p>
<p id="aw6uZJ">Perhaps the highlight of the menu involves table-side presentations. A lobster flambé, brings a decadent entire Maine lobster sautéed with rigatoni noodles and a pink vodka sauce. Steak Diane marries center cut rib-eye steak and a Worcestershire-brandy mushroom sauce that is prepared and sliced at the table. Dessert is just as over the top with a baked Alaska flambé served with strawberry ice cream and Italian meringue and the Campfire S’mores, roasted at the table and finished with homemade vanilla ice cream.</p>

<p id="cuGWSl">Steaks of course form the centerpiece of the restaurant. A 12-ounce rib cab, the signature cut of the restaurant, is roasted over fruitwood and 900-degree coals. Tomahawk rib-eye steak and Japanese wagyu beef also land on the menu. </p>
<p id="c6I0se">Dakake plans to serve organic chicken topped with mushrooms sautéed in sage butter and prosciutto crisp and steakhouse staple surf and turf dinner with an 8-ounce filet mignon paired with Maine lobster and served with a homemade roasted garlic aioli and a red wine sauce. </p>
<p id="AwMIvQ">On the seafood side of the menu, sea scallops sautéed with a Fresno chili-miso glaze and served with steamed bok choy, Napa cabbage, and asparagus; a surf and turf sushi roll made with Maine lobster, peppered beef tenderloin, toasted sesame seeds, and fire tartar sauce; and a chilled shellfish platter stocked with Maine lobster, king crab legs, East and West Coast oysters, shrimp cocktail bites, and an octopus and calamari salad.</p>
<p id="1UWyGo">Dakake plans to offer vegan dishes as well, such as a Romanesco broccoli steak with grilled Moroccan olives, roasted peppers, toasted pine nuts, and white raisins, and vegetable truffle meatloaf with roasted root vegetables and topped with a rye whiskey mushroom gravy and fresh truffles.</p>
<p id="B1Ih2v">Aside from those table-side desserts, the steakhouse has a classic crème brûlée, topped with berries and an orange pistachio biscotti; Barry’s flourless chocolate cake, served with blood-orange sorbet; and seasonal, homemade ice creams and sorbets.</p>
<p id="2Nrr3x">Dakake brought on chef de cuisine Patrick Hodge III, who has a degree from the Pennsylvania Institute of Culinary Arts. Hodge began his career cooking alongside chef Charlie Palmer, and then went to work with Dakake in 2001 at N9NE Steakhouse. </p>
<p id="m7JfdB">The steakhouse plans to be open nightly from 5 to 11 p.m. The restaurant opens October 28.</p>

<p>The new resort on the Fremont Street Experience plans to open five bars</p> <p id="IOgjgl">The <a href="https://vegas.eater.com/venue/fremont-street-experience">Fremont Street Experience</a> newest casino <a href="https://vegas.eater.com/venue/circa">Circa</a> still plans to open portions of the resort ahead of schedule in October, and now owner Derek Stevens shares details on the five bars he plans to unveil.</p>
<p id="hBlAXc">The 1.25 million-square-foot casino and resort <a href="https://vegas.eater.com/2020/6/17/21294643/circa-restaurants-open-october-2020-downtown-las-vegas">plans to open the first five floors</a> along with a parking garage ahead of schedule on October 28. The resort plans to be an <a href="https://vegas.eater.com/2020/6/25/21302044/circa-adults-only-resort-las-vegas-opening-december">adults-only experience</a>, open only to those 21 and older. When it opens its first five floors in late October, it becomes the first casino and resort to ban underage visitors. Circa<strong> </strong>replaces the rundown, former Las Vegas Club<strong> </strong>with a glitzy, 21st century resort. The remainder of the resort opens in December.</p>
<p id="GJKTzD">Those who enter through the lobby will find Vegas Vickie’s with an iconic piece of neon from the city’s past. Vegas Vickie, the kicking cowgirl who sat outside Glitter Gulch, now hangs inside the three-story atrium at the resort. The bar features seasonal cocktails and retro lighting. </p>

<p id="hYC4xI">The three-level sportsbook includes Overhang Bar sitting on the top floor of the venue. Stevens, a native of Detroit, created the bar as an ode to Tiger Stadium. The now-defunct stadium featured an overhang in right field and his version at Circa will overlook the sportsbook. The bar features slot machines as well as seating for VIP guests. </p>

Paul Saginaw and Ann Arbor coffee roaster Steve Mangigian created the space with coffee sources beans from across the globe with a focus on estate-grown and micro-lot coffees in the 24-hour café.</p>

The resort plans to be an <a href="https://vegas.eater.com/2020/6/25/21302044/circa-adults-only-resort-las-vegas-opening-december">adults-only experience</a>, open only to those 21 and older. When it opens its first five floors in late October, it becomes the first casino and resort to ban underage visitors. Circa<strong> </strong>replaces the rundown, former Las Vegas Club<strong> </strong>with a glitzy, 21st century resort. The remainder of the resort opens in December. </p>
<p id="KloHq9">Steelman Partners designed the space with six pools and two spas spread over 15,756 square feet of wet space. Each of the pools features a different temperature, ranging from 78 to 94 degrees. On the fifth level, pools come heated at 104 degrees on colder days. </p>
<p id="pNnh9K">The complex includes 30 cabanas and super cabanas that can accommodate up to 25 guests. Approximately 340 chaise lounges, 38 day beds, and eight poolside boxes round out the spaces that can be rented. VIP services include dedicated servers and towel refreshment.</p>
<p id="jEcP2l">Stadium Swim also has its own food from Michigan restaurateurs Paul Saginaw, Chris Sotiropoulos, and Grace Keros. Menu highlights include lobster corn dogs with a yuzu dipping sauce, fruit nachos, and the Stadium Dog, Circa’s twist to a Sonoran dog. Customer can use mobile tablets that send orders directly to the kitchen or bar.</p>
<p id="hj4bwi">Saginaw plans to open <a href="https://vegas.eater.com/venue/saginaw-s-delicatessen">Saginaw’s Delicatessen</a> at the resort on Oct. 28, while Keros and Sotiropoulos will bring <a href="https://vegas.eater.com/venue/victory-burgers-wings">Victory Burgers & Wings</a> Co.</p>
<p id="KXOXrL">A 135-foot by 41-foot, 14-million-megapixel LED screen broadcasts major games and televised events. </p>
<p id="PhT7NI">The pools also plan to offer self-cleaning several times a day, fully recirculating water four to six times faster than required by public health codes. All eight bodies of water will have UVL sanitizers that get rid of pathogens, bacteria, viruses, organic, and inorganic contaminants, and greatly reduce chlorine use.</p>
<p id="wQLOU9">CEO and developer Derek Stevens, who also owns the D Las Vegas and Golden Gate, says four of the resort’s restaurants and the sports book, as well as the two-story casino with 1,350 slot machines and 49 table games, will debut in Oct. 28.</p>
